What are the effects of deleting blog posts? Long term effects? Short term effects? Are they held against you by search engines?

Should be minimum if it's just one or two. If you delete huge numbers of them it could start to effect your rank.

Why do you need to delete them. Can you just edit them?

Any time you delete a page from your website it sends a flag to Google and they have someone call you to ask why you deleted it and if you don't have a good excuse they will actually send the FBI out to investigate. At that time they will seize your computers and throw you and your family in jail. Don't worry though because you'll get your day in court to defend yourself but Google's attorneys will prove that you deleted the page as part of a subversive plot to shut down the Internet and you'll be lucky if you only get life in prsion.
